I’m a self-taught baker, I’ve been baking for so long that I can put together a cake or cookie without a set recipe and am quite used to small batch baking and making mini cakes. All my recipes are made from scratch but occasionally, where it makes sense, with time-saving ingredients like puff pastry.
Both my mother and grandmother were fabulous, natural no-need-of-a-recipe bakers. They conjured up beautiful bake after bake and my memories will never fade of those times in the kitchen with them.
Cakes, biscuits, cookies or any bakes never last long here. I have always enjoyed baking in smaller quantities for a couple of reasons.

Firstly I always like to test out any recipe to save wasting ingredients. Baking a smaller version of something makes sense. Lots of experimentation has taken place to scale down our favourite recipes to more manageable portions,
And secondly, we bake in small batches because we love cake, cookies, savoury bakes and desserts but we also love variety and there will be no leftovers to entice you to overindulge!
Of course there are times when larger cakes or bigger quantities of cookies are needed. Most times you can just double up on our recipes or if not we will give details for a larger version of our bakes.
